Am i stuck?

    Based on this grain bill i assume i would finish around 1.016 or so but i have been at 1.022 for 5 days now. I pitched 1.5 packets of s-04 19 days ago. Temp was low sixties for the first 2 weeks and then i warmed it up to near 70 for the last five days. Should i pitch more yeast or is this just my FG?

    Few things. What was the mash temp? Higher temps in the mash means more unfermentables in your wort, hence a higher FG. Also, if you have a consistent gravity reading over 5 days, you're probably done. Lastly, 1.5 packs? I'd always just pitch the 2, you won't run any overpitching risks and you'll make sure you fermentation is healthy and happy.

    It was steeped around 160 for 30 minutes or so. So i wasnt expecting too much conversion there. As for the 1.5 packs im not sure why but that is what i had. I dont recall what i used the other half pack for. Im going to assume its finished, i keg so i dont have to worry about bombs.

    For a 1.060 beer 1.5 packs is more than enough. You used a lot of specialty grains, along with the fixed ferment ability of extract my guess is that you're at you FG. You got a lot of unfermentable sugars in there. Being a stout it may still be just fine for the style. I'd bottle it and make it a learning lesson for next time

    The hydro samples taste great. I'm just going to run with it and call it finished.

    There isnt a damn thing wrong with fermenting at 70 degrees. just sayin

    I'd say 70 is a bit over optimal for S-04 (despite what the manufacturer says)...but the beer will likely be fine.
