Brewing an Alaskan Amber clone all grain and the recipe calls for a 15 day secondary @ 40 deg then bottle and 10 days @ 50deg. Somewhat understand the 40 deg cold crash but will it carbonate at 50. Used Wyeast 1007.

What is the purpose of a 10 day cold crash? Seems like over kill. Maybe 7 days and raise temp to 70 and bottle.
