AHS Christmas Ale

    Hi All. My first post here but I've been reading for a few years and brewing for a few years as well. I've had a few batches turn out so so recently so It's time for some advice.

    I have a AHS Christmas Ale in the secondary now, it's been 17 days total and my FG is 1.013 and the recipe calls for it to be 1.012. Should I stick it out a few more days? I was hoping to have something to drink by Christmas.

    Give it a couple days and take another gravity reading. If you are still at 1.013, then the beer is done fermenting, and you are ready to keg/bottle. I see no reason it will not be ready to drink by Christmas. Of course, an additional week in the bottle usually improves the taste, so by New Years Eve, it should only be better. Cheers!

    Bottle it.

    FG is a "ball park" figure. 0.001 is not going to create bottle bombs.

    Funny thing is I've got the same brew in secondary and it's taken forever to get down, I'm hoping to bottle it this weekend.

    The samples have tasted great!
