My cucumbers are starting to put out fruit, and I wanted to make some good deli-style half sours without using any vinegar (straight ferment). Can anyone suggest the appropriate spices, brine concentration, ferment time and temperature, etc..? I have a good food-grade bucket and non-iodized kosher salt.

See if you can find a copy of the book "Wild Fermentation" by Sandor Katz, thats got everything you need to know. I believe Alton Brown did an episode on lacto fermented pickles too.
