What are you using to stir? Is it plastic?

Some "plastics" are VERY heat resistant.

Up to 400f+

Ahhh i see now. I've been trying to find a long stainless steel ladle for about two weeks now. None of the major retailers carry anything longer than 12" it's very frustrating. I've seen some in an E.C. Kraus catalog but they are whoa expensive. Any suggestions where I can find one on the cheap side?
