I did a search and found some discussions about using instant grits in place of flaked maize. But, I haven't seen a lot of follow up on how it worked out.

Anybody have any experience brewing with Instant Grits?

Can you tell any difference in taste between grits and flakes?

Is a cereal mash necessary with "instant" grits?

Can you substitute for Flaked maize at a ratio of 1:1?

what kind of mash tun are you using, while the two are very very similar, I would worry about a stuck sparge with the grits more so than the flaked maize.

I use a converted cooler and I usually use some rice hulls.

I've used flakes before I just thought the Instant grits might save me a little $$$.

I used the instant grits once as a very cheap alternative to the flaked corn. For the mess and pain in the ass of the cereal mash, buy the flaked corn. trust me

So you DO have to do a cereal mash with the instant grits? I knew that I would have to with the regular grits but I didn't know weather or not I would have to with the instant.

I believe you're right. That does seem like a PITA just to save a couple of bucks.
