when making Hefeweisen, pre-bottling/kegging, would you want to cold crash?

or does that defeat the purpose of a hefe??

The goal of cold crashing is to reduce the quantity of yeast in suspension before bottling. If you love the taste of yeast, don't cold crash. However, good commercial examples taste to style and have very little yeast left in suspension.

With that said, I always cold crash my wheat beers with good results.

Dont cold crash it or secondary it. Keep the yeast and drink it young.... that is a heffe.

With my Bavarian Hefe, I cold crashed it for about 2 weeks before I entered it into a local homebrew competition. I felt like this reduced the yeast in suspension but since hefe yeast has a low flocculation there was still a good hazy/cloudy aspect to the beer. It presents a cleaner flavor too.
