Default Best Yeast for a TART Hefe?

I was drinking some really nice, tart hefe (Paulaner) at a Christmas party the other day.

Which yeast will give me that really tart taste?

That stuff was GREAT in a draft!

I used WLP300 and fermented in the upper range of recommended temperature. It's kind of tart, so maybe fermenting at the highest recommended temperature would get you where you want.
The only thing more asinine than stupid rules is the enforcement of rules simply because they are the rules.
