Hey guys,
I am new to the forum, although not to Apple wine making, and had a question how what spices and how much of them to put in a 5 gallon batch of Edwort's classic. I figured cinnamon and cloves, but how much? I will be using generic tree top juice too (actually, should I use the juice or cider for best results?)

If you are asking about making Edwort's "Classic" apfelwein..he uses NO spices in it. To add spices you would no longer be making Edwort's but another derivative. If you are simply asking how much spice to add to a 5 gallon batch....I'd safely say 2 cinnamon sticks and 2 whole cloves at most. Spices really pack a punch in even larger quantities of mead.

again..if your aim is to make Edwort's apfelwein, you'd use Tree Top apple the recipe calls for. Anything else would not be Edwort's.

5 gal secondary: Strawberry Mead
1 gallon secondary: Blood orange Mead
1 gallon secondary: Grape Mead
On Tap: Blackberry Blonde Ale
On Tap: Apple/Cherry Hard Cider
