whelp, i was going to add half a pound of chocolate malt to the mashing step, but the LHBS was closed by the time i could have gotten there, so i did without it.
Final recipe ended up as follows:
mash @ 155 - 160 for 45 minutes in 1.5g water:
2lb Weyermans Dark Munich
1lb Weyermans Cara
sparge into 1.5g @ 170
add 3.3lb Breiss Pale LME
.5oz Fuggles (60)
.5oz Fuggles (15)
.5oz Wilamette (10)
and a wirlfloc tablet at 15.
OG came out right where beersmith said i would for 70% efficiency - 1.038, so i was happy with that.
pitched my two and a half day old starter (poured off most of the liquid and pitched slurry) and it looked like it was bubbling yesterday.
So, we'll see how it goes. It just occurred to me today that i've never brewed a mild like this, so i'm not sure if i'll even like it. We'll see :-)
