Default Hefe Help

I got a simple recipe ready to brew for the week end:
7# Wheat LME
1/2 oz Perle :60
1/2 oz Saaz :05
WLP300 Hefeweizen Ale Yeast

I have 2 oz of Centennial Hops laying around, is there a way I can add this to the recipe? All the Hefe recipes that I see have very little hops so I was wondering what this would do to the end flavor. Maybe I could call the brew "Hop Hefee"

Depending on the AAs of the hops you should add them all in at the beginning of the boil.

True HWs don't use flavoring or aroma hops, only bittering.

I usually use 3 to 3.5 AAs per 6 lbs of DME in 5.25 gals.

Centennial is 10% AA So I am guessing no.

I will just save it for my next Pale Ale

I was reading in another thread about adding honey during fermentation. So I picked up a jar for this recipe. I have a 35oz jar, but if I add any will I have to adjust the malt that I put use during brew?

Why would you add honey to a HW?

HWs are really simple...water, wheat/barley mix, hops, and a special yeast of course...nothing more.

I would leave out the honey. Keep it simple and I think you will be happy with it. Oh and keep your fermentation temperatures low if you can or you will end up with too much banana flavors.

You could but it will dry it out and add an innappropriate alcohol character. This style is really more about simplicity and the yeasty/bready charater. I think your original recipe is perfect. The aroma hops are a bit unusual for the style, but I like my beers to have a bit of hop character and unless you are planning on turning it into a competition it would probably be a nice addition.

My advice, keep the honey for a cream ale or IPA and keep it simple for the heffe. Beers tend to get murky when you start dumping in honey and hops just because you have them.
