Definitely gonna need a "protein" rest for THAT one. Unless of course, all your beers will have that "band aide" flavor to them.

I'm working as a pro now, but that doesn't mean I'm not still homebrewing. I'm going to see if I can homebrew at work as a way to develop new recipes.

Man, got beaten to the "cream ale" comment.

I wonder what that would do for head retention. How many fermentables would that add?

Would you need to pitch yeast?
