I've got five gallons of an American Amber in my plastic primary conical fermenter, and would like to move it to a six gallon glass carboy to add some holiday spices. My concern is the headspace. is it too much, or am I overthinking?

You're overthinking.
There will be plenty of CO2 in the beer, and some of that will come out of solution when you rack, giving you a nice protective layer of CO2 over the top of the beer.

I have a bunch of 6 gallon BBs now. I use them for primary and secondary (when I secondary, which is not very often).

The nice big neck makes it easy to add wood/fruit/etc. to the secondary if you make such beers.
