Procedure

Mash in at 26.56qt @ 154f for 60 min
Mashout at 168f for 10

WLP007 not 001 like what is in the topic.

Just *barely* had enough mashtun space in my 10g blichmann for my sparge arm. If you aren't sure of your space or you have a large deadspace under your false bottom and a 10g mashtun, you might want to subout some Maris Otter for a pound or two of DME.
 
Holy motherload. This sounds a lot like the barleywine we brewed and are now aging. sounds like a REAL treat! Good luck keeping your paws off this brew for a couple months!
 
I kegged this mofo on Thursday and dropped in 2oz of cascade leaf hops. Did a little tasting yesterday and right now. Holy mother! This is outstanding! Super rich and complex, lightly sweet malt profile, but not confusingly so. Nice and bitter, some good hop flavors. This beer rocks! I'll see how it ages and see if I would change anything.
 
This sounds great! I'm definitely adding this to my brew list... Have a yeast question though. I've heard WLP007 and S-04 have the same origin. Would you think pitching a couple packs of S-04 instead might work? I'm shooting for around 11-12% as well (Going BIG here). I'm not sure of what the alcohol tolerance of S-04 is. Maybe I should use some Nottingham to get there? I'm also planning to bottle conditioning (don't have an empty keg). So whatever I use I may need to re-pitch at bottling.
 
daringleada, no one has gotten back to me on this one. I may just have to save this one until I start doing all grain. If you do find the extract equivalent, please let me know.

Saq might have to put his thoughts in here but since Vienna, Aromatic and Honey malts all require a mash, I don't think it would be the same beer without a mash. However, taking those out and replacing the Pale Malt with 10-11 lbs of DME ( or 12-13 of LME) and steeping the rest of the grains might get you close.
 
As my first post here, I would like to say that I have brewed this twice now and it is an amazing beer. Thank you for an excellent recipe.
 
This is an amazing beer, great mouth feel. Brewed it on Nov 21, kegged it on Dec 7th and let it sit till Dec 23rd. It
s a big hit in the neighborhood. Could only get (OG) to 1.098, my TG was 1.021. Thanks for the recipe!!
