I am on my 4th extract batch. With each batch my fermentation starts in 12 to 24 hours and is pretty vigorous for about 24 hours. Then the bubbles stop, the airlock insert stays elevated but no more bubbles. I know there is still fermentation occurring but does the lack of real bubbles mean my fermentation is incomplete? I probably just like to watch the bubbles.

Bubbles mean next to nothing. They're fun to watch but that's about it. The only ways to tell fermentation is complete are to have patience and take hydrometer readings.
