OK, let's say that I brew this weekend.

In just over a year (one year, two weeks to one year, 3 months depending on how I finish), I'll be graduating from school. I have a couple of friends who will be graduating with me and I'd like to give them a bottle as a gift. Will it be good by then? I'm not talking about "ready to drink", I'm talking about "ripe". I'd like to crack a bottle or two for my graduation and I'd like my friends to enjoy the gift I give them.

That's 4 months to ferment, and then about 8-11 months to age. Should be good by then, right?

It'll be ready to drink as soon as it's ready to bottle.

However, if you waited 6 months to a year it will get better.
