I notice the same thing, not just my beers but also commercial beers. Without going Wikipedia , I'm pretty sure your taste buds go through phases of sensitivity, when cells are being replaced. Aroma too, I had an Ommegang Hennepin at a restaurant one weekend and the phenolics were vastly pronounced, then the next weekend at a barbecue, I could hardly detect them. Obviously batch differences in a bottle conditioned beer could be the reason, but it was night and day.
