Original Gravity: 1.060
Final Gravity: 1.012
IBU: 65.8
Boiling Time (Minutes): 60
Color: 8.4
Primary Fermentation (# of Days & Temp): 7 at 68
Secondary Fermentation (# of Days & Temp): 14 at 66
Tasting Notes: Good at 24 days from brewing. Only getting better.

11.50 lb Pale Malt (2 Row) US (2.0 SRM) Grain 88.46 %
1.00 lb Victory Malt (25.0 SRM) Grain 7.69 %
0.50 lb Caramel/Crystal Malt - 40L (40.0 SRM) Grain 3.85 %

0.75 oz Summit [16.50 %] (60 min) Hops 34.1 IBU
0.85 oz Sterling [6.80 %] (35 min) Hops 14.7 IBU
1.00 oz Centennial [9.80 %] (15 min) Hops 13.7 IBU
1.00 oz Cascade [5.50 %] (5 min) Hops 3.4 IBU

1.00 oz Centennial [10.00 %] (0.5 qt Hop Tea in secondary)

1.5 minutes of pure O2 for oxygenation

1 packet of US-05 dry yeast

Mash Name: Single Infusion, Medium Body, Batch Sparge
Total Grain Weight: 13.00 lb
Single Infusion, Medium Body
Mash In Add 16.25 qt of water at 165.9 F hold at 154.0 for 60 min
Sparge Water: 5.5 gal/2 Sparges
Temperature: 175.0 F Tun Temperature: 153F
Mash PH: 5.2 PH

Kegged at 2.5 vols

force carbed at 30psi for 32 hours
2 days later tastes great for green beer. Lots of hop flavor and aroma. bitter enough to kick but not beat you down.

I work in medicine, so I named my IPA HHIPA Violation. It stands for Hella Hoppy IPA. Just f-ing around thinking of differnt names for beers.

So now that its been in the keg for a few weeks, I have to say its a damn good beer. Its still a little strong on the bitter side, but the hop flavors follow up well. It's my SWMBO's favorite beer I've made. Just have to hold out from drinking it until Oct. 11. I brewed this for our engagement party. Along with 20 gallons of other beer.

Update.

This beer is amazing. My friends and I kicked the keg in no time and everyone said it was their favorite beer I had on tap. I had my Sorachi Blonde, Roktoberfest, and EdWorts Mild Mannered Ale as other offerings. I love this beer. The centinnial comes through so well and blends with the cascade nicely. It should because they're cousins or something but the hop flavor was what I have wanted to make since I started brewing. Once again, I love this beer, it is the best beer I have ever brewed.

Haha gonna hafta brew this now cuz I'm in healthcare as well! only problem is I'm still only a partial mash / extract brewer at this point.
