I had always thought it was pronounced like "white", as in a Belgian "white". When I visited Otter Creek brewery, they were pronouncing Wolaver's Wit as if it rhymed with "twit". I suppose you could also consider a pronunciation like "wheat". So, can anyone give me a solid answer on this?

It is pronounced "vit".

Like the first syllable of "victual".

The full form, witbier, is pronounced "vit'-beer"
