So I have a lot of ingredients left over from other batches Ive made, I'm looking for any ideas for recipes.
I have the following:

13 lb wheat malt
8 lb pilsner malt
1 lb honey malt
1 lb caramel 60L
1 lb caramel wheat
1 lb rye malt
0.5 lb english brown
0.5 lb pale chocolate
0.5 lb special roast

1 oz saaz - pellet
1 oz EKG - pellet
2.25 oz hallertau - plug
unknown amount of homegrown chinook and fuggles

1056 - American Ale
1098 - British Ale
1084 - Irish Ale
1388 - Belgian Strong Ale
3068 - Weihenstephan Weizen,
3638 - Bavarian Wheat

WLP002 English Ale Yeast
WLP380 Hefeweizen IV Ale Yeast
WLP023 Burton Ale Yeast

saflager S-23
safbrew T-58

I know I can easily do a hefeweisen or maybe a belgian wit, but what else?
EDIT: I forgot to mention I just harvested a bunch of home grown coriander so a wit is definitely high on the list.

Brew the wit. Many people really like them, then you can have fun telling them that it's "just something I threw together with some stuff I had left over."

Ok, not too many responses. well this is the recipe I'm thinking of:

Type: All Grain
Batch Size: 5.25 gal
Boil Time: 60 min
Brewhouse Efficiency: 80.00


Amount Item Type % or IBU

4 lbs Pilsner (2 Row) (2.0 SRM) Grain 42.11 %
3 lbs White Wheat Malt (2.4 SRM) Grain 31.58 %
1 lbs Rye Malt (4.7 SRM) Grain 10.53 %
8.0 oz Honey Malt (25.0 SRM) Grain 5.26 %
8.0 oz Melanoiden Malt (20.0 SRM) Grain 5.26 %
8.0 oz Oats, Flaked (1.0 SRM) Grain 5.26 %

0.40 oz Chinook [13.00 %] (60 min) Hops 17.1 IBU

1.00 oz Coriander Seed (Boil 5.0 min) Misc
1.00 oz Orange Peel, Bitter (Boil 5.0 min) Misc

1 Pkgs SafBrew Specialty Ale (DCL Yeast #T-58) Yeast-Ale

Est Original Gravity: 1.051 SG
Est Final Gravity: 1.013 SG
Estimated Alcohol by Vol: 4.93 %
Bitterness: 17.1 IBU
Est Color: 6.1 SRM

The grain bill maybe a little complex for a wit I might leave out the melanoiden and or honey malt. I am also a little unsure of the proper amounts for orange peel and coriander also if I should crush the coriander or not. I left out any aroma hops so the spices would show through a bit more. any suggestions?
