Recipe Type: Extract   
Yeast: WL English Ale   
Yeast Starter: why not   
Additional Yeast or Yeast Starter: ....ok   
Batch Size (Gallons): 5   
Original Gravity: Not important   
Final Gravity: Low   
IBU: incalculable   
Boiling Time (Minutes): 30   
Color: light   
Primary Fermentation (# of Days & Temp): 14 days @68   
Additional Fermentation: If desired   
Secondary Fermentation (# of Days & Temp): 14 days @68   
Tasting Notes: Delicious roasty flavor of pumpkin seeds. Bitterness from hops and slightly burnt see   

Stage 1

3 lbs light DME

1/2 oz bullion hops for 30 min.(additional bitterness comes from the roasted seeds, I would not exceed 1/2 oz for 30)

WL English Ale yeast

After transfer to secondary (all fermentation finished)

3 cups raw pumpkin seeds
1 tbsp butter
1/4 cup brown sugar
1 tsp cinnamon

Mix all and place on a cookie sheet.(use foil for less clean-up)
Roast at 450F for 20 minutes or so, until a seed or 2 are looking almost burnt.


I dumped the whole thing immediately into the secondary. By then infection is highly unlikely, but I figured piping hot was safer than letting it sit around.

There should be a small secondary fermentation.

You will want to filter with a hop bag.

Anal clarifying nerds will want to tertiary.(another secondary)



Trully unique. I got great reviews from some serious snobs.

Is this really for a 5 gal batch or just a 2.5 gal batch? I make the 2.5 gal batches and the 3lbs of DME is typical of what I use. I thought that 5 gal usually use 6-7lbs of DME.

Thanks! BTW- I have a pumpkin farm around the corner and pumpkins will be available by labor day! whoo hoo!

I really did 5 gallons. It did not have a ton af alcohol, but it tastes great.

Definitely up it if you want!

I am really contemplating more of a porter or stout for the pumpkin seeds this year. It could have taken a richer beer, I was just experimenting, and wanted to really taste the pumpkin seed contribution flavor wise.

not sure about the butter. How is the head retention?

Definitely omitted butter and upped the DME for the subsequent brewing.

I also added a little crystal 60. I will post the new version.

I did a pumpkin beer last October with a pumpkin mash and then once I racked it to the keg I added pumpkin seeds. I will taste it this October for Halloween, it's been a year on the seeds.

WOW!! This brew was tasty because of the seeds, but the roasty character faded after a month or so.

A longer time on the seeds would be good.

This is NOT a pumpkin beer though.
