After 7 day primary ferment, split batch off. 4 gal to main 5gal secondary where 1oz sterling is added for a week then an additional 1oz simcoe dry hop addition is added till bottling, 1gal off to secondary 3gal secondary fermenter where some bourbon soaked oak chips will be added.
 
Sorry to keep you guys hanging, it was my first post so I figured you guys would have just ignored me! Thankfully I am definitely hooked on brewing and many batches later I think I did good for a first batch. I just updated the recipe with some post-post changes.

Anyways, the beer is awesome. I have named it Achilles Strong Ale, its a bit hoppier than most American Strong Ales (on the Arrogant Bastard side of the fense, in a good way!) and I love it, as do my friends. The oak aged batch turned out REALLY well, I have since done some more oak aging beers that have been stellar.

Its got a complex lightly biscuity malty caramel backbone, with a fantastic clean bitterness and some complex hop flavors and nose. I'm going to brew it again soon with some probable minor changes (hop selection) seeing as I only have one bottle left!
