How do you age your bottled home brews? Do you keep them at room temps, in the cellar, or should they be put into the fridge?
I currently have 6 cases of nicley carbed beer and apfelwein in my closet at a stable 70 degrees.

70 is great while they get carbed up. After that they will last longer if kept cooler.

I think the cooler the better but room temp is fine.

SWMBO isn't too keen on filling the fridge with my brews. I'm allowed about a 12 pack. But the beers don't last in there too long. Are the beers sitting at room temp maturing?
