It can dry the beer out. The longer mash can result in a much more fermentable wort that ferments out to a lower final gravity. This can be desirable in certain styles but not in others.

I think your efficiency is better then you think. if your shooting for 6 gallons, you need to just boiled down to 6 gallons, and your OG should be dead on. But if you do have more wort then you expected, after your boil is completed, your OG will be low since its essentially watered down.

Boil longer and this should correct your problem.

also remember to adjust for temp. I had to look up some direction on-line to adjust for temp.

Next up: Double IPA for friend, Kolsch, Graff, American Wheat, Dunkleweizen.

do a single malt vienna brew

for some reason, i've gotten over 80% efficiency the last few times i've used vienna as my base malt.

and it's good damn brew, too
