What kind of hops could replace the crystal? I can't seem to find any locally.

Mt. Hood, Hersbrucker, French Strisslespalt, Liberty, Hallertauer

according to the byo hop substitution chart:

Hops - Brew Your Own (BYO), the How-To Homebrew Beer Magazine

I made a batch with liberty a few months ago and it was pretty good. Since all the hops go in at 60 min and are only used for bittering, not a lot of flavor comes through anyways.

I made this beer today. Went smooth no stuck sparges. I did 5 gallon batch, 6lb 2row, 2lb flaked maize, .5lb flaked rice (from lhbs). Used 1oz Saaz hops. Got gravity of 1.043 so my efficiency was good. Only thing im worried about is the initial wort is awful brown. The clerk at the HBS didnt have flaked rice on the shelves. I asked him, and he went in back and came out with pound. I hope he heard RICE and not RYE. Im looking foward to a BMC looking beer to give to my friends. If by chance there was a miscommunication, what would flaked rye do to my beer?

Well...you'd still have a three crops beer.

Flaked rice should have been white in the bag with no husks. It almost looks like instant potato flakes.

1/2 pound of rye will not make a bad beer...but a different beer. If indeed that's what you used, it will be a crisp, almost spicy flavor.

That sounds about right. I think I probably did get flaked rice then. I asked for it, he had alot of flaked rye on the shelves. The beer in fermenter has turned from brown to more orange color now. These colors are throwing me off, shouldnt it look yellow. Its 26 hours, and fermentation has started. I pitched the dry pack without hydrating. Getting lackluster results compared to my last ferments with starters and slurry yeast. I have big crausen layer, some floaty activity under and some co2, but no foam head. Hopefully its starts kicking hard soon! 66 degrees right now according to carboy temp strip. I closed the window in the fermenter room, as its about 30 degrees outside.

Hopefully this pic link works. Does this look about right Biermuncher? Its fermenting like mad, its 30 hours in, with a pitch of the safe ale 05 from the package, non hydrated. I think the color is off. The crausin is very thick, and is not bubbling. Usually my beers foam, and bubble at the top. This has a thick layer preventing that so far. But it has really took off in last 4 hours. 66 degrees.

That color looks spot on. Never try to judge a finished products appearance by what it looks like in the carboy. It will turn out fine.

This should be my lightest colored beer, was just suprised its darker than the hefes Ive made. I feel much better that it got the seal of approval. Next pics will be when its done! Thanks Biermuncher. It has been lighter day by day. I hope to see through it sometime. But then again, without moss and gelatin, ive had poor luck with getting clear beer. This one got moss, and will get gelatin too, unless its real clear.
