Problem with Honeywell gas valve cutting off

I have been using an Auber PID to control a Honeywell natural gas valve for my HLT (see picture below) for over a year and about 25 batches with no problems whatsoever.

Yesterday while brewing the gas valve would periodically click and the gas would cut off including the pilot light. This required me to relight the pilot numerous times which was a PITA but at least I was able to finish the brew day. Right before the gas cutoff I think I heard the gas sound intensify as if I had opened an input valve wider, however I wasn't adjusting anything.

Does anyone have a suggestion as to what the problem might be?
 
Thanks. I should be able to test that sensor with a multimeter.

Edit: I decided to buy a new Honeywell thermocouple since was only $9 on Amazon Prime.

Edit #2: I tested the burner with the new thermocouple added and it worked fine. Appreciate the suggestion day_trippr.
