I'm going to brew a hefe using ~7lbs. of DME and I have some Crystal 15L that I'd like to use for steeping grains.
Any suggestions on how much to use? I have a pound.

Go for the whole pound, it couldn't hurt!
No matter how rich you are, you can still only drink 16 or 17 liters of beer a day.
