Does anybody have any recommendations on a good extract Octoberfest? I hear you should brew these beers in March, traditionally, so I better get on my horse :fro:

I think the problem with brewing an "extract" O-fest is that a lot of the grains needed to get that malty bill are grains that require mashing (a la Munich, etc). Even an AG brewer might improve his O-fests by doings things like decoction mashes, etc.

So, I'm not saying its impossible, I'm just saying don't expect a great O-fest without at the very least doing a large partial mash...
