5 .5 gallon into fermenter
Sg 1.090.
Fg 1.020.
Abv 9.1
Boil time 90 min
Grain Bill
12# pale ale malt 3.5 L.
6# Munich 10L
Mash 151F until converted (60min).
Hops:
2oz. Northdown 60 min.
2oz East Kent Golding ( or other Golding varieties) 5 min.

Nottingham yeast.
Ferment in primary for 2 months at 60F.

Notes:If bulk aged longer transfer to secondary. May replace 6# of munich 10 L with 4# Munich 20L and 2# pale ale malt for darker color/ flavor next time. Extended boil needed for sweeter finish. Ferment at higher temp for fruitier yeast character

60 ibus calculated. Northdown hops 10%AA. Goldings 5%AA. Don't be fooled by the simplicity it's a great beer.
