Clarity isn't everything....i actually enjoy drinking the settled yeast (especially in witbier) but brewers yeast is really good for you and has many health benefits. the swmbo is into natural medicine and i stumbled across that little pearl while leafing through one of her many books.

Local brewery here, Bristol's, has a honey wheat that has sediment and it says to pour all but about 1/4 of the bottle, swirl then finish. Wonderful beer, but I didn't care for the sediment in my first brew. I just pour and as said sacrifice the 1/4 inch or so to the beer gods.

Cold Crash for a week prior to bottle..This will leave far less yeast in the bottle..Down side it it will tak emuch longer to carb..but I have a kolsch that I can pour the whole bottle in with just a paper thinh layer of yeast left in the bottle with a crystal clear beer..fantastic
