I have just attempted my first brett beer and have a few questions for you guys. I did More Beer's Sour Blonde recipe which is:
8# Rahr 2-Row
3# Belgian pilsner
12 oz Crystal 15L
12 oz white wheat
1#Demerara sugar
I decided with WLP 670 for the primary yeast, it is one my favorites and I did a 1200 mL starter. This batch started showing fermentation activity in about 2 hours!
I let it go for 9 days and drained the trub. (Fermented in my Fast Ferment which is now a dedicated brett vessel).
On day 9 I added 6 cans of Oregon red tart cherries and 1 vial of WLP 645 brett c.
My question is if I should add another vial or just let it ride as is for 6 months to a year?
Thanks in advance! So far this batch smells pretty good through the air lock.
