I make applewine by pitching yeast into a carboy filled with treetop apple juice. If I pitch a carboy filled with Welches grape juice will wine be produced? thanks

I think it's about 7.5 or 8% if you don't add any sugar. I always add sugar to mine to get it to about 10% (which makes it take longer) and let it do its magic for several months. The batch I have going now, I started in a bucket, then racked to a carboy after a week and a half to get it off of the sediment.

You can certainly taste it after a month and see if you like it. If you bottle that early, either stabilize it with Campden and potassium sorbate, or put it in strong bottles in case it's not finished yet. You don't want any bottle bombs.

I just checked my notes. I started mine on May 28:

4 gallons Concord grape juice, 16 brix
2 tsp yeast nutrient
1 tsp yeast energizer
½ tsp grape tannin
2 lbs sugar
2 tsp potassium bicarbonate
1 pkt Cotes des Blancs yeast
