Hi,

I'm thinking of brewing an Amber with mosaic hops and rye malt. Going for a sort of spicey, fruity, cakey vibe.

Terrible idea?

Something like the following:

Malt

Marris Otter 6.5 pounds
Rye Malt 2 pounds
Munich Light 1 pound
Crystal 40 1/2 pound
Crystal 120 1/2 pound
Biscut 1/2 pound

Hops

Mosaic 60mins 3/4 oz
Mosaic 10mins 3/4 oz
Mosaic flameout 3/4 oz

Yeast

Safale US-05

Stats

OG: 1.051
FG: 1.013
Abv: 4.9

Certainly an amber with rye sounds great. I'm not sure I'm sold on mosaic with rye or in a amber. Summit, apollo, chinook would be good choices imo

Fair enough, could always sub the 60mins for a neutral bittering hop. Dry hop the saved mosaic perhaps.

It'll be horrible.

Brew it and send me the results. I'll take it off your hands.

(Seriously, I really like the idea of rye in an amber, and I love ambers with more hop presence. I'm not sure exactly what rye + Mosaic would do, but it'll probably be okay.)

I think your recipe will come out fine, only a question of what you're looking for.

I think you may need more rye, and perhaps some flaked rye as well.

I think the hop additions are probably pretty good.

The Crystal hops may sweeten it up more than you like.

Here's what I have in a fementor right now:

8.0 oz Rice Hulls (0.0 SRM) Adjunct 1 3.8 %
9 lbs Pale Malt, Maris Otter (3.0 SRM) Grain 2 68.6 %
3 lbs Rye Malt (4.7 SRM) Grain 3 22.9 %
5.9 oz Wheat, Roasted (425.0 SRM) Grain 4 2.8 %
4.0 oz Rye, Flaked (2.0 SRM) Grain 5 1.9 %
0.50 oz Columbus (Tomahawk) [14.00 %] - Boil 60.0 min Hop 6 25.0 IBUs
0.50 oz Columbus (Tomahawk) [14.00 %] - Boil 20.0 min Hop 7 15.2 IBUs
1.00 oz Styrian Celeja [4.50 %] - Boil 10.0 min Hop 8 5.8 IBUs
1.0 pkg California Lager (Wyeast Labs #2112) [124.21 ml] Yeast 9 -

The 6 oz of Chocolate Wheat in mine adds to the head retention and creates a wonderful hue. Lots of fans.

Here's what I get:

Thanks all, think I'll swap out the bittering addition and will consider reducing the crystal
