Normally I'd agree. But I like my IIPA's to be completely over the top. What about dry hopping? An IIPA is just begging to be insanely dry hopped.

That's what I was thinking...

1 Ounce each of Summit and Sterling as FWH (90 minute boil)

1 Ounce Sterling at 15 minutes

1 Ounce Sterling at 5 minutes
1 Ounce Summit at 5 minutes

This gets your IBU's to around 90 (the style calls for 60.0-110.0).

Then dry hop with 2 ounces of Summit for 7 days.

I did an IIPA at the end of December. I had two oz of bittering hops, then just 3 more oz from 15 min to flame out and then 2 oz to dry hop.

It's not over the top, but it did just take a first place in a competition. The recipe is on another computer of mine, so I don't have access to it just yet.

Another thing that I will always recommend for and IIPA now is sugar. Add a lb of dextrose because you want it to ferment out on the dry side of things.

That still gets you to 144 IBU's.

I think (especially with Summit) a 45 minute boil is as bittering as a 60 minute boil.

I'm an advocate of First Wort Hopping to get balanced bittering, and then restricting all other hops additions to 15 minutes or less to extrude flavor and aroma and not blow the needle off the bittering charts.

Again, the IIPA style calls for IBU's of between 60 and 110.

some reason Im thinking id have to have an OG of 1.2 to get a balance....
