We don't have cellars here in Florida, so I just built one in the garage.
I just completed my 3' x 4' x 3' fermentation box. It will also be for cellaring.

I just put the following in...

Ommegang Three Philosophers - 2007
Ommegang Abbey Ale
Ommegang Hennepin
Ommegang Rare Vos
Orval
St Bernardus Abt 12
Avery The Reverend Quadrupel
Saint Somewhere Saison Athene
Saint Somewhere Lectio Divina

All are 750ml except the Orval.
I should go pick up more Orval, one is not going to be enough.

I'd challenge most anyone here to contend for the "I don't have a good beer shop close to me" title. I have to take advantage of any trip more than 300 miles to get some good commercial stuff to stock up on.

I was in Omaha recently and pick these up at a GREAT beer shop called Brewtopia. There is a forum member by that name, don't know if there is a connection.



I know these aren't real rare, but as you can see on the left I favor an IPA, but I'm trying to grow out of it and try more and more styles. Im really looking forward to the Trappistes.
