I'm planning a brew this weekend. Been reading about the water profile and it appears a little calcium and gypsum is needed.
I looked at Bru N Water and used the Pilsen profile which shows 7ppm calcium, 2ppm magnesium and sodium, 8ppm sulfate, 6ppm chloride, 15ppm bicarbonate.
I usually only add calcium and gypsum to my profiles.
I am a BIAB brewer and use filtered water from those stand alone machines.
I read a post by Martin from Bru n Water and he said using 40ppm calcium is beneficial.
2.5 grams of calcium using 4.8 gal water would get me 40.8ppm calcium. Using .3 grams of gypsum would get me 8.1ppm sulfate. With these changes the chloride is 66.3ppm which is more than what Bru N Water calls for.
Can someone review and provide some insight as to what is best to add to get the profile closet to what I need?
