I'm transitioning to all grain for my next batch and I've gathered this information from my water report:
Starting Water (ppm):
Ca: 90
Mg: 25
Na: 60
Cl: ?
SO4: 77
HCO3: 196
Chloride is completely unknown. I couldn't find it anywhere. What I've been seeing is that this should make pretty suitable brewing water but I need to get my alkalinity down a little bit for lighter styles of beer. Everything else appears to measure within normal boundaries. Am I missing anything else? I'll try to call my water company tomorrow and dig up the Chloride numbers. My projected Mash PH using the EZ water calculator is 5.78 with a very standard grain bill plugged in as an example. I know I need to bring this down a hair as well. What would you all use in this scenario? Or should I just not worry about it and brew away?
