Default 1 hour boil - When do I time?

I am planning to use dry malt extract for my wort and boil for an hour. But when I do start timing the boil? After the hot break? Or when it just starts boiling?

I usually boil for 5min so the hot break can develop and collapse, then add the bittering hops and start the timer.

Once you have the break down and add your hops, then start the timer. The real reason for timing the boil it to get utilization correct, anyway.

thanks guys. i always thought that the boiling was to stabilize the wort.

You were still right. You boil off bad compounds, isomerize acids, kill bacteria, or anything else living for that matter... The list goes on.

But a reason for knowing exactly how long your boil is is for hop utilization calcs.
