This was a critique of a Dogfish 60 min. clone I did a while ago. As much as I love the Dogfish's 60 min., I like my IPAs a little less balanced than the 60 min. - not a west cost bitter bomb, but something more hop-assertive than the 60 min. For the grain bill percentages, I took Yoopers advise on the amount of Amber malt to use (always a good decision!). This turned out very nice. For my IPA pallet, this beer is it.
FERMENTABLES
6 lbs. extra light DME (61.5%)
3 lbs. 2-row (30.8%)
.75 lb. amber malt (7.7%)
HOPS
1 oz warrior (~4.7 grams every 5mins. 60-35 mins.
1.5 oz Simcoe (+) 1.5 oz Amarillo mixed - 12.2 grams every 5mins 30-0
.5 oz simcoe (+) .5 oz amarillo mixed - hop steep @ 180 degrees for 20 mins.
YEAST
S-05 (+) starter
Mash low at 148-150 for 60 min. - Boil 60 min.
There was about .5 gallons lost to the hops, so the final yield was 5 Gallons.
