Notes:
Brewday: 12/21/07. OG - 1.069. Pitched fully expanded Wyeast 1056 smack pack.
01/04/07 - SG - 1.014. Racked to secondary. Tastes delicious, though not nearly as bitter as I thought it was going to be. Dry-Hopped with 1oz simcoes.
01/21/07 - FG 1.013. Bottled with 4oz dextrose. Might be a little too much since there was only 4 gallons. Oops
01/28/07 - Pours with a very nice head. Probably am going to bleed the bottles since I used a bit too much sugar I think. The carbonation in this beer is great. Excellent pale amber color, moderate lacing of the thick-pouring head. Still tastes quite green, but the Grapefruit/citruisy aroma almost blows you over. Finished with a strong but pleasant bitterness. I can't wait to see how this beer changes with time.

Just thought i'd put it out there...this beer is delicious. I am going to make more of it. A lot more. There's a bit of chill haze, and head retention is a bit lacking for what I'd like. Might use a fining agent in secondary and add 1lb of carapils for better head retention. I always love a good, rocky head on my beers, especially when the bubbles trap this kind of goodness. The bitterness is apparent and very pleasant, and the aroma! Let me tell you about the aroma! It's a citrusy hop bouquet that tantalizes the olfactory nerves.

I'm still interested to see how it changes with time...hasn't been in the bottles much past 2 weeks now, but I don't have any problem drinking it . Gotta get that hop aroma while it's fresh!

EDIT: 3/06/08 - Head retention is very plentiful now...must have had some emulsifier inside the glass before. Nice, rocky head lasts until the bottom of the glass. MMM mmmm.

Head retention is awesome. The lace on the glass lasted and lasted. Tasty beer.
