Default Trout and Lamb.

Sorry, no pictres of the finished dish. I had guests.
You'll get the idea from the raw ingredients.

River Trout lightly smoked over oak.
Lamb Rump with roast veg with herbs (not pictured)


Plus the other things you see.

Nice, I can't even get those raw ingredients around here. Once in a while I'll see a lamb shank, but I don't know of anyone that carries fresh fish closer than Portland. Weird part is, there are sheep, rivers & lakes all over around here.
