In doing research for another project, I came across a reference to an article in the August 1996 issue of Scientific American, "The Mystery of Lambic Beer." I can't find an online copy, but you can get a PDF of the issue for $7.95
. I've seen this article cited in several reference sources, so I assume it is pretty well done. Just a heads up for you sour beer folks.
