Most "how to brew" instructions have suggested that your beer will be "ready" 2 weeks after bottling. I've found that while 2 weeks will produce a decent, drinkable beer, it's actually takes about 2 months until the beer is really good. (At about two months the beer magically transforms from "I would drink this" to "I would BUY this!"). What does everyone else think? What's the "minimum" bottle conditioning time for "normal" types of beer?

I can agree with that.

This is one reason why I stock up and have about 10 batches on-hand...

I totally agree with the OP. I know that the 1 2 3 guidline is popular around here but mine is more like 2 4 8. You just can't rush great beer. Homebrewer 99 is right on. Brew more beer so you don't have to rush it!
