Default adding fruit

i plan on adding some grapefruit to my beer and in papazian's (spelling??) book he didn't say whether to skin the fruits or not....

during or after pasturizing the fruit ...when should they be skinned or should they??

I would skin them before pasturization. I would also get rid of the white rind and segment skin. I've never heard of a citrus additive. Seems pretty acidic. I'd love to try some though...
Once the wind has been broken, it cannot be fixed.
