After about 6+ days of a healthy fermentation at ~66F, I took a gravity reading and it's at 1.011.
Smells good, looks good, tastes good, seems nice and balanced.
I'm no judge of alcohol volume by taste and this is a first time doing this recipe, but it seems OK to me.
I must have diluted that first sample. Next time if it's off I'll slow down a tad and dunk the hydro into the bucket after a subsequent stir. I just love the learning process
