Default Imperial Coffee Stout

Recipe Type: All Grain
Yeast: S-05
Yeast Starter: none
Batch Size (Gallons): 4.8
Original Gravity: 1.073
Final Gravity: 1.014
IBU: not sure
Boiling Time (Minutes): 90
Color: 25
Primary Fermentation (# of Days & Temp): 18d 65F
Tasting Notes: Bitter Chocolate, Smooth hint of roastiness, well balanced, great mouthfeel

72% efficiency, 7.7% ABV

13 lbs American 2-row
.5 lbs Carafa III
1 scoop of favorite coffee

1oz Warrior (18.2%) 60 min- ~year old in the freezer
1oz Cascade (7.70%) 60 min
2oz Cascade (7.70%) 10 min

Grind Carafa and coffee in a coffee grinder, then steep it in about .5 qts of cold water for a couple hours.
Mash 2row at 152 for 75 minutes without dark grain
Add dark sludge to the top of the mash just before sparging.

One of my best beers...reminds me of Irish Death. It wasn't nearly as bitter as I thought it would be..likely due to the old hops. My yeast did fine and I was fortunate, but in the future it would be wise to use 2 packets for such a high gravity beer. Pitched at ~60F.
Carb to 2.4 volumes.
