Yep, That would work. Just keep the water volume in your mash to less than 2qt/pound (1.5qt/pound is probably better).
Hold the temp at about 154 for about 45min.
Drain off the water and then add about the same amount of water back in.
Allow to sit for a few minutes then drain this off.
It should result in a decent extraction with a good flavor.
