Default Carrot wine

Hi guys, I made 2 gallons of carrot wine racked it and have now about a gallon and half, (sediment heavy) was wondering the proper time for secondary before bottling and should I besides clearing let it be or on advice sweetening it up lightly before bottling.

This might help

Make sure 20% of your fermentables come from ketchup or fruit cocktail cups, or you're out of style for "hooch".
