I recently decided to work on a new root beer recipe and would love it if someone could take a look at it and tell me what they think. I tried to compile different things from different recipes to come up with one recipe.
Root Beer Recipe
24 oz honey
1/2+1/8 cup sassafras
1/8 cup sarsaparilla
1 1/2 cup light brown sugar
1/2 vanilla bean (or 2 1/2 tsp vanilla extract)
2 cinnamon sticks
1/4 tsp nutmeg
1 cup dark molasses
2 gallons water (1 gallon for wort one for cooling)
1/4 tsp yeast (after cooled to <99 degrees or use seltzer water/dry ice)
 
That sounds like a lot if ingredients for the out put. Try pulling back the nutmeg to an 1/8ts and molases to 1/2cup. Nutmeg is a crazy strong flavor so be careful with it.
 
Also you may want to try using champagne yeast. I find it produces a finer foam and carbonation.
 
No wintergreen? Won't be root beer without it, really.

Nutmeg amount depends on whether it's fresh or McSawdust. Either way I think 1/4tsp is safe, that's good stuff.

Yes it needs Wintergreen.
