For those that make it let me know how you like it. It is rapidly becoming a favorite in my area.
 
Think I'm going to do a 5 gal batch but use the hop profile of the 11gal. Batch. Maybe not on the first couple additions. But for sure on the rest.
 
This beer was a real sleeper, good hop profile and malty sweetness. People drink it and think its low alcohol and then it hits them.

Let me know how it turns out with those hops.
 
will do. gonna start a starter tomorrow, just to get a head start on it. i was orginally going to make a black iipa version of pliney the elder...but im running to low on beer, and this looks good.
 
Just poured the first pint. The grain bill on this beer is great. As I said earlier, I changed the hop quantity. Kept the first 2 additions the proper amount for a 5gal batch but used the 10gal quantity for all the rest. It's pretty Effin good. I kegged it a couple weeks ago, slowly lowering the psi from 15 to 5. Could use a tad more carb. Will prolly be spot on next week.

Notes
dry hopped with all remaining hops on nov 28th, hops used in dry hop were all whole leaf, as thats all i had left.

over all this beer was amazing. i poured the first one a bit to early and was a bit lack luster. after another week and a half it had decent head retention and a great taste. the hops gave it a good spice quality and was well received by friends that dont dig hops as much as i do.
 
Interested in making this, but just wondering if you have tried using US-05 on this?

Just wondering because US-05 is a bit more fruity, so was thinking maybe you could ease down on the Simcoe and use US-05 to supplement that. Not sure if it would taste similar, but thought I'd throw it out there to see if you had tried this with your recipe.
 
Brewed this last week as a BIAB 3 gallon batch. Scaled appropriately, but rounded up on the grain and hops. Used:

8lbs Maris Otter
2lbs Rye Malt
10oz Black Patent Malt
1lb Vienna Malt

Then used 2oz Simcoe and 2oz EKG, an oz of Cascade. Spread with similar ratios throughout the boil.

It has been fermenting vigorously for the past 4 days. I plan on bumping up the dry hop amounts slightly.

I'll let everyone know how it comes out in about 6 weeks.
